This is a very simple recipe and the cheese is delicate enough to complement the asparagus.
Having broken off the tough ends of the spears, lay in an oven proof dish, season and drizzle with a little oil. Cut up a St.Jude and dot on the spears.
This will cook quickly, in about 10 minutes at around 180°C.
For this dish a light Piquepoul would match beautifully.
